Pizza. Aaaaah. That formerly elusive meal that used to taunt me with all its gluten, dairy, eggs and tomatoes.
I can now say with a happy tummy that I’ve tamed the beast! I’m very VERY excited about this discovery. If you are having a hard time with pizza, give this one a try.
First make this easy coconut-flour crust. It’s perfect for a personal serving.
Then make this tomato-free pumpkin based pizza sauce! I used 2 TBSPs on my pizza. (homemade pumpkin puree recipe here!)
I sauteed some zucchini as my topping (but, you know, please add whatever toppings make sense to you!), and topped it all with some of this dairy-free mozzarella cheese.
It took only 10 minutes in the oven at 375°F for the cheese to melt and the layers to bake together.
The best part was my surprise when I could pick up a pizza slice without the crust crumbling! The above picture captures that moment.
