Ingredients
Stew Meat Makeup
  • 3lb Stew Meat
  • 1/4C floursee notes below for Paleo/Gluten Free
  • 1tsp sea salt
  • 1tsp black pepper
Other Ingredients
  • 1tsp sea salt
  • 2tsp thyme
  • 2tsp paprika
  • 2TBSP cilantrofresh, chopped
  • 6cloves garlicminced
  • 1large onionchopped
  • 2cups baby carrots
  • 4medium potatoeschopped
  • 4cups broth/stock
Instructions
  1. Dredge stew meat in flour/salt/pepper mixture before adding to the slow cooker
  2. Cover meat with all the rest of the ingredients
  3. cook on high for 4-6 hours, and on low for 6-8 hours.

Recipe Notes

Nightshade alert!  You can easily leave out the pepper and paprika and substitute turmeric, coriander, ginger and/or cumin.

Paleo?  Substitute the russet potatoes with sweet potatoes and/or celery root.  Sub out the flour with 3 TBSPs arrowroot powder.

Gluten Free?  Sub out the flour with 3 TBSPs arrowroot powder or 3 TBSPs corn starch.

Need something easier?  Skip the meat makeup (you can always add in your cornstarch/arrowroot powder at the end anyway if you want things thicker), sub out the fresh onion, cilantro and garlic with powdered versions, and you can even skip the potato chopping and pealing by leaving this out too!
